Aurinkoinen kanakeitto – sunshine chicken soup

Ihanan lämmittävä ja piristävä keitto synkkiin ja kylmiin syysiltoihin.

Ainekset (noin neljälle)

3 perunaa
3 porkkanaa
1 sipuli
2-3 valkosipulinkynttä
10cm purjoa
400g kanasuikaleita
0,5prk maissa
1,5l vettä
1 kanaliemikuutio
1dl kermaa
2-3rkl vehnäjauhoja
Currya, kurkumaa, chili-ja paprikajauhetta

Pilko kasvikset. Lisää kiehuvaan veteen liemikuutio ja kasvikset. Anna kiehua. Sillä aikaa paista kanasuikaleet ja mausta ne suolalla ja pippurilla. Varmista, että ne ovat valmiita ennen kuin lisäät ne keittoon.

Sekoita kerma ja jauhot kulhossa hyvin. Lisää kurkumaa niin, että seos on kauniin keltaista. Lisää seos keittoon ja sekoita hyvin. Lisää kanat ja viimeisenä maissit.

Anna keiton kiehua vielä 10 minuuttia. Lisää currya, chili-ja paprikajauhetta. Tarkista maku ja lisää mausteita maun mukaan. Tuloksena pitäisi olla kauniin keltainen keitto.

A lovely and warm soup for the autumn evenings, with a very happy colour to brighten up the mood during darkening days.

Ingredients (for about 4 people)
3 potatoes
3 carrots
1 onion
2-3 cloves of garlic
10cm of leek
400g of chicken strips
Half a can of sweet corn (small)
1,5 l of water
1 chicken bouillon cube
1 dl of cooking cream
2-3 tbsp of wheat flour
Curry, turmeric, chili, and paprika powder

Cut the vegetables into pieces. Bring the water to boil, and add the chicken bouillon cube. Add the vegetables. In the meanwhile, fry the chicken strips and spice them up with salt and pepper. Make sure they are done before adding them to the soup.

Mix the cooking cream and flour in a bowl, make sure the mixture becomes totally smooth, otherwise you will end up with a lumpy soup. Add turmeric to the mixture so that it becomes light yellow.
Next, add the mixture into the soup while constantly mixing it. Add the chicken, and lastly the sweet corn.

Let the soup boil for another 10 minutes. Add the last of the spices, some curry, chili and paprika powder. Remember to check the taste, and add spices if needed. The end result should be almost bright yellow.

Serve hot with a nice piece of toasted brown bread. Enjoy!
